Street Corn Salad

INGREDIENTS

2 tablespoons olive oil

4 ears fresh corn, cut from the cob

¼ cup red onion

1 teaspoon Tajín® clásico seasoning

¼ cup queso fresco

2 tablespoons mayonnaise

½ lime, juiced

1 avocado, diced


DIRECTIONS

1. Heat the oil in a large skillet over medium-high heat. When pan is hot, add the corn and sauté for 5 minutes or until corn begins to char. Set aside and let cool.

2. Combine cooled corn and the remaining ingredients in a medium bowl. Stir to combine.

3. Serve immediately.
